Here is a list of the easiest to use Android apps that a beginner can use. I’ll start with suggesting an Alternate for the Android Market so those of you who’s phones do not have the Android Market can also access these.
Before you start, couple of notes. In order to install SAM, visit SlideME.org through the browser on your phone (Requires a GPRS / WAP / 3G Connection and data charges will apply). Once on the page, select the Install SAM option. It will download the SlideME app and install it. From there you simply launch the app and install the below.

HandCent (Replacement for the default Messaging App)
Dolphin Browser (Replace Browser that supports Tabbed browsing and RSS)
Crazy Home Lite (Replacement Homescreen with a host of configuration features)
Pico TTS (Replacement for the Default Text To Speech App)
MapDroyd (A simple Offline map system. Note: You will need to download your country map from within the app)
ChessWalk (An offline and online Chess game)
File Expert (A file explorer for Android, that also supports HTTP / FTP)
Movies (A Flixster App that lets you locate the latest and current movies and where they are playing in your city)
WiFi Buddy (A simple app that acts a WiFi Scanner. Note: Only Supports Non-Encrypted WiFi Connections)
PDF Utility Lite (A PDF Viewer that also can merge / split PDF Files)
Time-Lapse Lite (An app that allows your phone camera to automatically make time-lapse videos in .mov format)
Wave Secure (A security app that can help you trace / lock your phone in the event of theft / loss. Note: This is a paid app)
